Breakfast Nachos

Today, I give you the breakfast (or brunch) of your dreams.

Crispy, golden waffles topped with sausage, maple syrup, cheese, and fried eggs. If it sounds weird, I promise you – it is absolutely DELICIOUS! You really must try it ASAP.

This would be a great weekend breakfast for your family, or it would be a really fun brunch dish if you are entertaining family or friends (especially when paired with a mimosa or a bloody mary!). And you can customize the toppings based on your personal tastes. The options are pretty endless with this one!

The best part is that this meal comes together really quickly. You could easily sleep in on a Saturday and still have time to cook these breakfast nachos up in a hurry. (Bonus – I can’t think of a better hangover cure!)

Breakfast Nachos

Yield: 3-4 servings

Breakfast Nachos


  • 6 frozen waffles, cooked (I used store bought this time, but if I had homemade waffles in the freezer I would definitely use them instead)
  • 1 lb breakfast sausage
  • Maple syrup, for drizzling
  • 1/2 cup shredded cheddar cheese
  • 3-4 fried eggs
  • Toppings of choice - salsa, slice avocados, pickled jalapenos, green onions


  1. Preheat your broiler. Line a baking sheet with parchment paper.
  2. Brown sausage in a skillet over medium heat, then remove to a paper towel lined plate to drain excess grease. Set aside.
  3. Cut each cooked waffle into 6 wedges, and arrange the wedges across the prepared baking sheet.
  4. Top with the cooked sausage, then drizzle everything liberally with maple syrup.
  5. Top with cheddar cheese, then broil for 3-5 minutes, until the cheese is melted.
  6. Meanwhile, fry your eggs. I cooked mine over medium, but if you like a runny yolk, go for over easy.
  7. Remove the nachos from the oven. Top with the fried eggs. Add your toppings of choice. DEVOUR.
