These pumpkin chocolate chip oat bars are not only a delicious way to satisfy your pumpkin spice sweet tooth, they’re healthy enough to be eaten for breakfast!

I whipped these babies up in less than 30 minutes, using ingredients that I always have in my pantry. They are sweet, chewy, and guilt free! Enjoy them for breakfast, an afternoon snack, or even dessert. I calculated these to come in at less than 65 calories per bar, so you could even eat 2 without feeling like you needed to get in some extra miles on the treadmill. And the subtle pumpkin flavor is perfect for fall!

Any other time of the year, you could easily substitute mashed banana for the pumpkin puree and get equally as tasty results!

Pumpkin Chocolate Chip Oat Bars


  • 1 cup old fashioned oats
  • 1 tbsp Splenda
  • 1 tsp cinnamon
  • pinch of salt
  • 1/4 cup pumpkin puree
  • 2 tbsp maple syrup
  • 2 tbsp powdered peanut butter
  • 2 tbsp almond milk
  • 2 tbsp dark chocolate chips


  1. Preheat oven to 350. Line a 3 cup baking dish with parchment paper.
  2. In a medium bowl, combine oats, splenda, cinnamon, and salt.
  3. In a small bowl, whisk together the pumpkin, syrup, powdered peanut butter, and milk. Stir into the dry ingredients until well combined. Stir in the chocolate chips.
  4. Spread the mixture into the prepared baking dish. Bake in preheated oven for 15 minutes.
  5. Allow to cool for a few minutes in the pan, then use the parchment paper to lift out of the dish. Cool completely, then cut into 8 bars.
  6. Store in an airtight container.
